Ingredients

30 minutes
Serves 6 servings
  • Dry ingredients :
  • 1/2 cupyellow corn flour
  • 1/2 cupall-purpose flour
  • 3/4 cupground rice flour
  • 2 tbspbaking powder
  • 1/2 tspbaking soda
  • 1/2 tspsalt
  • Wet ingredient:
  • 2 tbsphoney
  • 1large egg
  • 1/2 cupmilk
  • 1/2 cupcream corn
  • 1 tspapple cider vinegar
  • 6-8long medium thick carrots
  • Peanut oil for deep frying
  • sticksWooden or bamboo

Steps

30 minutes
  1. 1

    Place the carrots on a roasting pan, season them with salt and pepper and do not drizzle oil.
    Roast them at 180ºC for about 12 - 15 minutes.
    Carrot should not be soft, al dente center is best since they gonna keep cooking when frying.

    When ready, set the carrots aside and let them cool completely, then proceed to insert bamboo sticks.

    Meantime in medium size bowl, mix all the dry ingredients, then add all the wet ingredients, mix until well incorporated, small lumps are ok. Refrigerate for about 10 - 15 minutes.

    Place the chilled batter into a tall glass or jar, this allow you to easily submerge the carrot into the batter.

  5. 5

    Start heating the oil. Check the oil temperature 185º - 190º C.

  6. 6

    Dip the carrots into the batter, one at a time, holding the carrots from the stick with tongs, carefully and slow drop it into hot oil.

  7. 7

    Monitor the temperature, it should not drop more than 15 degrees when placing the corn dogs.

  8. 8

    Do not crowd the pan, fry 3 - 4 corn dogs at the time. This will ensure evenly golden brown and well cooked batter.

    To know when the corn dogs are ready is the corn dogs are floating, look evenly golden brown colour and the bubbles around them are smaller.

  10. 10

    Use tongs to take them our. Place them onto cooking rack. Keep them warm in the oven.

  11. 11

    Serve warm, with the dipping sauce or simple ketchup and mustard.
