Ingredients

  1. 1 cupflour
  2. 0.5 tbspcorn starch
  3. 0.5 tbspcinnamon (optional)
  4. 0.25 tbspbaking powder
  5. 0.25 tbspSalt
  6. 0.25 tbspsugar
  7. 1.25 cupstock
  8. 0.5 tbspMirin
  9. 4eggs or equivalent qty flax seeds substitute (see tips)
  10. Veggies
  11. 1 inchginger
  12. 1large potato
  13. 0.5large cabbage
  14. small diced + large diced mushrooms (optional)
  15. Spring onion, sea weed (optional)
  16. Sauce
  17. 1.5 tbspsugar
  18. 4 tbspketchup
  19. 2 tbsphoisin sauce
  20. 3.5 tbspWorcestershire sauce

Cooking Instructions

    Mix flour, salt, sugar, corn starch, cinnamon and baking powder. Mix well. Add stock and mirin.

    Use the side of the grater with protrusions to make grated paste of potato. Add to flour mix. Mix well and set aside for 0.5-1 hour.

    Mix sugar, ketchup, hoisin sauce and Worcestershire sauce to prepare okonomiyaki sauce.

    Mince cabbage. Prepare flax seeds mix.

  5. 5

    Add eggs or flax seeds substitute in batter. Add finely chopped/grated ginger. Add small diced mushrooms.

    Add cabbage to batter in small quantities at a time and combine.

  7. 7

    Oil on pan. Take 1 person's portion of batter on pan and make pancake like shape. It can be thick. Place large pieces of mushroom on top of it.

    Cover pan and cook for 5 mins. Then flip it to other side and again cook. Once done take it on a plate.

    Spread okonomiyaki sauce and lots of Japanese mayo. Top it with spring onions and dried sea weed.
