I keep coming up with different ways to make mac and cheese. I think I found the right combo.
If you don't know how to make a roux, this is for you!
To step it up a notch add sauteed chopped pepper and onions for fiesta mac!
This is the cheesiest Mac and cheese. Total hit and highly requested.

Ingredients

35 minutes
  1. 2 boxeselbow noodles
  2. 1 cancheddar cheese soup
  3. 1/2of a brick of pepper jack cheese
  4. 1brick of provolone cheese
  5. 1 1/2 bagsshredded sharp cheddar cheese (32 oz bags)
  6. 3 Cwhole milk
  7. 1 canevaporated milk
  8. 1/2 stickbutter

Cooking Instructions

35 minutes

    Bring heavily salted water to a boil

    Add elbow noodles.

  3. 3

    Turn down temp of noodles.

  4. 4

    Slice provolone and pepper jack cheese. I use a veggie peeler to make the slices thin.

    Preheat oven to 350°

  6. 6

    Separate pot, heat whole milk, bag of shredded cheddar,can of cheese soup, all of the provolone and pepper jack cheese, and can of evaporated milk.

    Stirring often so the cheese will not stick to the bottom.

    When noodles are done cooking, drain and add to large aluminum pan. Stir in 1/2 stick of butter.

    Mix until butter is almost melted completely.

  10. 10

    Once cheese is melted, pour into noodles.

    Mix some of the left over shredded cheese into the mix.

  12. 12

    When all mixed together, sprinkle the last remaining cheese on top.

    Put in oven for 30-40 minutes or until the top is golden brown.

    You can eat it before baking, but why not wait til it's amazing!?

i love cooking and baking. I try all kinds of recipes. when i cook, i rarely measure after i use a recipe. i can eyeball it and it always comes out great.
