Steps

First soak the chickpeas in hot water for 10 hours, then drain the water, add the chickpeas to the cooker, add cinnamon, tejpatta, cloves and salt along with 5 glasses of water and cook it for 8 to 10 whistles.

Now turn on the gas, put a pan on it and heat the oil, then add cumin, asafoetida, ginger, garlic paste and stir constantly.

Then add finely chopped onion and saute till it becomes golden. Now add puree and all spices and saute till oil is released.

Then put boiled chickpeas in it and press a few chickpeas with a spoon so that the chickpeas become thick and add water if needed.

Soi Chhole is now ready.
This Chhole can be served with Kulcha, Roti, Paratha, Puri and looks very nice with rice.
