Easily Made in a Rice Cooker! Chirashi Sushi

I used all the ingredients I usually cook in a pot to make this chirashi sushi in a rice cooker. It couldn't be easier!

You can estimate the amount of each ingredient. You can also change the ingredients or seasonings to suit your taste. Do not use konnyaku if you intend to freeze the dish for later use. I made this in a rice cooker capable of cooking 3 cups of rice. I cooked it in one batch. I used a ratio of 1 part soy sauce, 1 part mirin, 1 part sugar, and 7 parts dashi stock. If you keep this ratio, the flavor will be the same, regardless of the amount. Recipe by maritta

Ingredients

3 servings
  1. 1☆Carrot
  2. 1 small☆Bamboo shoot
  3. 250 grams☆Lotus root
  4. 1/3☆Burdock root
  5. 1 packages☆Shiitake mushrooms
  6. 3sheets ☆Aburaage
  7. 2 tbspSoy sauce
  8. 2 tbspMirin
  9. 2 tbspSugar
  10. 210 mlJapanese dashi stock (or water plus dashi granules)
  11. 1Vinegared Sushi Rice (or just steamed rice)

Steps

  1. 1

    Briefly boil the aburaage. Finely chop all of the ☆ ingredients. You don't have to mince them, but they should be finely julienned into short pieces. You can thinly shave the burdock root.

    Put all the ingredients, except for the rice, into the rice cooker. Turn on the rice cooker and cook until everything is tender. Cool the ingredients together so that the flavours blend.

    Even if the rice cooker doesn't turn off, you can stop the cooking manually when the ingredients have softened.

  4. 4

    Mix in the vinegared rice to make chirashi sushi. I use sushi vinegar You can use plain rice to make mixed rice. The ingredients make enough to mix together with 3 180ml cups of uncooked rice (cook before mixing). You can freeze leftovers for later use.

  5. 5

    The photo shows the chirashi sushi topped with nori seaweed, shiso leaves, grilled eel, and ginger cut into the shape of flower petals. You can also add salted salmon roe or sashimi grade raw fish.
