Ingredients

10 servings
  • 13 ozcooked chicken, cut into small cubes (about 365 grams)
  • 2 tablespoonsvegetable oil
  • 1/2 cupchopped onion (about 1/4 kg)
  • 2 clovesgarlic, finely chopped
  • 1/2red bell pepper
  • 2chopped jalapeño peppers
  • 1/2 teaspoonground cumin
  • 1 teaspoonMexican chili powder or mild chili powder
  • 1/2 teaspoondried oregano
  • 2 teaspoonssalt
  • 1 cupcooked black beans
  • 1/2 cuptomato purée or tomato sauce
  • 1/2 cupchopped green onions
  • 1/4 cupchopped cilantro
  • 1 cupshredded cheddar cheese or preferred cheese
  • 1 cupshredded Monterey Jack cheese or preferred cheese
  • 10flour tortillas
  • 1beaten egg
  • 1/4 cupoil for frying
  • 1/2 cupsour cream
  • 1/2 cuppico de gallo

  • Ingredients for guacamole
  • 2ripe avocados, mashed (not too smooth)
  • Juice of 1/2 lemon
  • 1/3 cuptomatoes, diced small
  • 1/4 teaspoonsalt, or to taste
  • 1/2 tablespoonchopped cilantro
  • 1/2 teaspoonfinely chopped jalapeño pepper
  • Mix the avocado with lemon juice, tomatoes, salt, cilantro, and jalapeño pepper

Steps

    Heat the oil in a skillet. Sauté the onion with the garlic and red bell pepper. Add and cook for 2 minutes: jalapeños, cumin, chili powder, oregano, and salt. Add the cooked chicken, black beans, and tomato purée or sauce. Stir well and cook until heated through. Let cool.

    Once cooled, mix in the cilantro and green onions. Lay the flour tortillas on the table and divide the filling evenly among the 10 tortillas, spreading it in the center.

    Mix the cheddar and Monterey Jack cheeses together and sprinkle over the filling on each tortilla. Use a pastry brush to brush a little beaten egg around the edges of each tortilla.

    Fold the left and right sides of the tortilla over the filling and brush a little more egg on those sides.

    Fold the bottom and top toward the center to seal. Preheat the oven to 420°F (215°C).

    In a skillet, heat 1/4 cup oil. Fry the tortillas on both sides until golden brown, then place them on a baking sheet. Heat the chimichangas in the oven for about 15 minutes, being careful not to burn them.

    Serve the chimichangas with sour cream, pico de gallo, and guacamole.
