Here's a quick and delicious dinner idea that's also very healthy if you steam the potatoes in the microwave with almost no oil.
Cooking Instructions

Slice the potatoes for the omelette and thinly slice the onion. I use a grater to do this quickly.

Place them in the Lékué steam case (I use the large flat case). Add 3 tablespoons of olive oil. Microwave at 850W for 8 minutes, stirring halfway through.

After microwaving, let the potatoes rest inside the closed steam case for about 3 minutes.

Beat the eggs in a large bowl, add the potatoes and onion, and mix everything well.

Heat a splash of oil in a skillet. When hot, add the egg and potato mixture. Cook over medium heat until set on the bottom, then flip and cook for another couple of minutes if you like it less set.

Transfer to a large plate and enjoy!
