Ingredients

  1. 2large eggs, beaten
  2. 2/3 cup2% milk
  3. 1.5 cupsshredded cheddar cheese
  4. 1 cupcrushed saltines. About 28 crackers
  5. 1/2 cupfinely chopped onion
  6. 1/2 tspsalt
  7. 1/4 tspgarlic powder
  8. 1/4 tsppepper
  9. 2 lbslean ground beef
  10. 1/2 cuppacked brown sugar
  11. 1/2 cupketchup
  12. 2 TbspDigon mustard
  13. Minced fresh parsley(optional)

Cooking Instructions

    In a large bowl, combine the eggs, milk, cheese, saltines, onion, salt and garlic powder. Crumble beef over the mixture and mix well. Shape into a loaf. Place loaf in a greased 13x9 baking dish. Bake uncovered at 350 degrees for 50 minutes.

    For glaze. in a small saucepan bring brown sugar, ketchup and mustard to a boil. Reduce heat, simmer uncovered for 3-5 minutes or until heated thru. Spoon over meat loaf

    Bake 10 to 15 minutes longer or until meat is no longer pink and thermometer is 160 degrees. Drain. Let stand 10 minutes before slicing. If deserired top with minced fresh parsley.
