Cannelloni with Spinach and Cheese Sauce

❇️Spinach is primarily cultivated in Europe and North America, though it originates from Asia.
💠There are several varieties of spinach. The most well-known in Greece are:
•common spinach
•Princess Juliana
•short spinach and
•broadleaf Argos.
💮Spinach is available fresh, canned, or frozen. It can also be preserved in regular freezers after blanching for a long time. It can be eaten cooked (like in spinach rice or cuttlefish with spinach), made into various pies (like spanakopita), or even eaten raw in salads. It can be added to nutritious juices, but when cooked, it loses its vitamin C content.
⚜️It is rich in iron, beta-carotene, vitamins C, E, and K, B-complex vitamins, selenium, zinc, calcium, magnesium, chlorophyll, iodine salts, and saponins. It is very beneficial for proper bowel function and against anemia. It helps strengthen the immune and nervous systems.
❇️In 2018, global spinach production was 26.3 million tons, with China alone accounting for 90% of the total.
⚜️Originally from the Persian aspānāḵ, it entered European languages through Latin, which borrowed it from Arabic. The English word "spinach" dates back to the late 14th century from the French espinache (French: épinard).

Ingredients

40-45 minutes baking
serves 3-4 servings
  • 1/2 packagefrozen spinach
  • 1medium-sized onion
  • 1 packagecannelloni
  • 1/2 packagePhiladelphia cream cheese (200 grams)
  • 3 1/2 oz.feta cheese (100 grams)
  • 1 3/4 oz.graviera cheese (50 grams)
  • 1/3 cupmilk (1.5% fat) (about 80 ml)
  • 2 handfulsgrated cheese for topping
  • 1little olive oil for sautéing the spinach
  • 2 pinchessalt

Steps

40-45 minutes baking
  1. 1

    Turn the stove to high heat and in a pan, add the oil and spinach to start softening. Peel and finely chop the onion and add it in. When ready, turn off the stove and add salt.

    In a deep bowl, crumble the feta and add the cream cheese. Grate the graviera and mix well, gradually adding the milk. Once the ingredients are combined, pour the mixture into the spinach and mix until the cheeses are incorporated into the spinach.

    Using a teaspoon or clean hands, fill the cannelloni and place them in a baking dish. Once all are filled, pour the leftover filling liquid over them. This helps soften the cannelloni and ensures they cook well without drying out.

    Bake in a preheated oven at 390°F (200°C) for about 40-45 minutes, depending on your oven. When they are well softened, add the grated cheese evenly over the dish and increase the temperature to finish baking, allowing excess moisture to evaporate and the cheese to brown on top.

    Turn off the oven and serve hot!
