Carrot, Coriander and Sweet Potato Soup

Ingredients

  1. 5medium carrots
  2. 2medium sweet potatoes
  3. 2 stickscelery
  4. 1onion
  5. 1large handful of coriander
  6. Salt
  7. Mixed herbs
  8. Oil
  9. 1 litrevegetable stock

Cooking Instructions

    Peel and dice the sweet potato and carrots into small cubes. Place them on a baking tray, drizzle with oil, salt and mixed herbs and give it a little mix

    Roast the sweet potato and carrots in the oven for 30-40 mins at 180°C. Meanwhile Chop your onion and celery and fry it in a large pan for ~10mins

    Add the carrots and sweet potato to the large pan, along with the vegetable stock and corriander, and tuen the heat down to low

  4. 4

    Cook for a further 10mins, then blend until smooth. Serve with crusty bread
