Just made soup with things in my cupboards and fridge. So you can adapt this recipy easy. Works with carrots instead of sweet potato.

Easy sweet potato and pointed pepper soup

Just made soup with things in my cupboards and fridge. So you can adapt this recipy easy. Works with carrots instead of sweet potato.

Ingredients

30 min
1 liter
  1. 1/2large sweet onion
  2. 3red pointed peppers
  3. 2 sticksselery
  4. 1large orange sweet potato
  5. 1 tbgarlic paste,ginger paste (can use fresh)
  6. 800 mlwater
  7. 1small can of chopped tomato
  8. 2stock cubes(chicken or veg)
  9. 1 tbras El hanout
  10. 50 grCream cheese plain or with herbs (optional)
  11. 1/2chilipeper if you want it hot
  12. Pinchsugar

Cooking Instructions

30 min
  1. 1

    Chop onion and selery in small pieces.

    Put oil in pot and sweat the onions and selery for 5 min.add ginger and garlic and if you like chili

  3. 3

    Meanwhile cut the other
    veg. And add to onions

  4. 4

    Let cook for 3 min. Cover with water and stock cubes

  5. 5

    Season with ras El hanout,pepper and salt

  6. 6

    Put in tin of tomatos

  7. 7

    Let cook for 30 min

  8. 8

    Take half the soup out. Mix the other half.add creamcheese and sugar

  9. 9

    Put in the other soup.

  10. 10

    Serve with toasted bread and some koriander or flat leaf parsley
