Easy Minestrone made with Tomato Juice

cookpad.japan
cookpad.japan @cookpad_jp

I had tomato juice that I wanted to use up, so I tried making soup with it. This is really good for you since it has tons of vegetables in it. Cooking the vegetables slowly really releases their flavor.

Feel free to use any vegetables you like – go ahead and add anything lurking at the bottom of your veg compartment.

I didn't list any meat in the recipe, but this also tastes great with bacon or chicken added. Recipe by Maji
