Ingredients

  • Ube Cake
  • 4eggs
  • 1 cupsoftened butter
  • 1 1/2 cupwhite sugar
  • 2 tspvanilla
  • 1/2 cupube halaya
  • 2 tspube flavor
  • 2 1/2 tspbaking powder
  • 2 1/2 cupall-purpose flour
  • 1 cupmilk
  • Ube swiss meringue buttercream
  • 6egg whites
  • 1 1/2 cupwhite sugar
  • 2 cupsbutter
  • 2 tspvanilla flavor
  • 2 tspube flavor
  • 2 tbspube halaya

Steps

  1. 1

    Mix in medium to high speed sugar, vanilla, eggs, butter

  2. 2

    Add ube halaya, baking powder, ube flavor then mix again medium speed

  3. 3

    Add milk and flour mix again medium speed, scrape bottom to mix everything then mix again

  4. 4

    Transfer to two 7inch baking pans

  5. 5

    Bake in preheated oven 40mins 150°C

  6. 6

    For ube swiss meringue buttercream, mix egg whites and sugar in a bowl

  7. 7

    Put bowl on top of boiling water, continuously mix until sugar is dissolved, remove from heat

  8. 8

    Mix in high speed until it thickens then put in freezer for 15mins

  9. 9

    Then put it in mixer again and gradually add softened butter, mix in high speed, scrape sides then mix again

  10. 10

    Put ube halaya, ube and vanilla flavor, mix again

  11. 11

    Assemble cake and top with macapuno
