Mix in, maida, sooji, besan, salt, ajwain, black pepper and Kasuri methi.
Next add ghee. - 2
Rub nicely to give moyen.
It must bind crudely and break. So you know your moyen is ok. - 3
Next add water gradually. I added 1/4 th cup + 1 tbsp normal water.
Now make a tough dough. - 4
Cover and let the dough rest for 25 minutes.
After resting the dough, slightly knead it and divide into portions. Now I wanted different shapes of mathri so firstly I took small pieces of the dough... - 5
Using back of a clean glass I flattened the dough.

Next I used knife to slit and poke the mathri so that it doesn't puff up while frying.

Oil was heated side by side.
The prepared mathris are to be fried in medium hot oil till it gets a golden brown colour and crispy texture.
Fry a shade lighter as it continues cooking even after taking out.
For giving even shape, roll out the dough into medium thick rotis, give slits with knife/ poke with fork. - 8
Now use cookie cutter to give any shape of your choice.
My son wanted me to make stars as it's DIWALI
Star mathris were fried crispy and golden brown. - 9
Similarly round mathris were also prepared.
Extra oil was drained.
Let the mathris come to room temperature.
It is nicely flaky and crispy. - 10
Keep in airtight container and enjoy with tea/ chutney of your choice.
