Italian style Brussels Sprouts

Ingredients

  1. 2# Brussels sprouts, halved
  2. 1/2 Cpanchetta, finely diced
  3. 2 Tolive oil
  4. 1/2 tspS&P each
  5. 1 tspfresh thyme leaves
  6. Balsamic vinegar, to drizzle
  7. Parmesan cheese, grated
  8. Pine nuts, toasted

Cooking Instructions

    Preheat oven to 450°. In a bowl, toss Brussels sprouts, olive oil and S&P. Place on a cooking spray prepared baking sheet and roast, stirring half way, until tender and lightly browned, about 25 minutes.

    While sprouts are roasting, saute 1/2C diced pancetta until crisp. Drain and set aside.

    In a bowl, toss the cooked sprouts with the pancetta, 1 tsp thyme, a drizzle of balsamic vinegar. Top with fresh grated parmesan cheese and toasted pine nuts. Serve.
