Leftover creamy mustard turkey

My husband experimented with cooking a whole turkey on the bbq last weekend (in prep for Christmas). It was delicious - I'll share his recipe / method in a separate recipe. As expected, we had a lot of leftovers so in the spirit of #cookeverypart, I used the carcass to make stock which we will use at Christmas for soup and possible some gravy, and this creamy turkey will use up the remaining meat.

Heat a tbsp oil in a frying pan over a medium heat. Add the onion and fry until soft. Then add the garlic and fry for a couple of minutes.

Next add the leeks, mushrooms and season generously. Fry for another couple of minutes before adding the turkey. Mix everything together. Then add the mustard, stock and creme fraiche. Combine and serve with rice.
