Ingredients

  1. Pork chops and pork belly (I had a little leftover pork belly, so I marinated it together)
  2. Turmeric powder
  3. Garlic cloves, ginger, shallots, chili peppers
  4. Seasonings: honey, sugar, salt, chicken bouillon powder, black pepper

Steps

    Rinse the pork chops. Finely mince 4 shallots, 5 garlic cloves, and 1 piece of ginger, then mix with the pork. Season with 2 tablespoons honey, 1 1/2 tablespoons turmeric powder, 1 tablespoon salt, 1 tablespoon chicken bouillon powder, and plenty of black pepper. Add a little cooking oil to keep the meat from drying out. (Adjust seasonings based on the amount of meat; I used 4 pork chops.) Marinate for 30 minutes.

    Start grilling the meat. You can use an air fryer or a charcoal grill.

    To make the fish sauce: Mix 1/2 cup water, 2 tablespoons fish sauce, 2 1/2 tablespoons sugar, 1/2 tablespoon MSG (optional; skip if your family doesn't use it), and 1/2 tablespoon lime juice or vinegar (adjust to your preferred sourness). Stir until dissolved, then add minced garlic and chili.

    To make scallion oil: Heat a pan and add oil until hot. Season a bowl of chopped scallions with a little chicken bouillon powder and a pinch of salt, then pour the hot oil over the scallions.

    Arrange everything on a plate and enjoy.
