Oxtail Soup Thai style with Herbs

Soup for Thai dishes is quite simple with herbs. Oxtail menu is easy to cook but takes a very long time to get the nice, soft and tender. Not every Thai are the beef lovers. That’s why it is not easy to find oxtail soup in Thai restaurants. That’s why… I use Thai style with this recipe because in Thailand you can find this recipe in the Thai Muslim restaurants and seems very popular. I have 3 steps for cooking. Step 1, I start with blanching because this step can release the strong smell of the oxtail. Step 2 , I cook in a pressure cooker to make a nice, soft and tender oxtail soup. The last step is very important also. Remove from pressure cooker and simmer for a while on the stove, and then apply seasoning before serving in mellow flavor. It must be spicy, sour, a little salty, and some aromatic flavor.

Steps

Boil water, add lemongrass, fresh makrut Thai lime leaves and oxtail. Banch for 15 minutes, scoop up and wash in clean water.

Put water, oxtail, lemongrass, ginger, coriander root, fresh makrut Thai lime leaves, salt and ground black pepper in a pressure cooker. Bring to a boil and simmer in a pressure cooker in the meat function.

Release the pressure, open the lid. Remove from pressure cooker, and simmer for 10 minutes on the stove. Add onions, tomatoes, season with lime juice and chilies.

Sprinkled with coriander leaves, spring onion and and fried shallots before serve.
