Chicken Cutlets are crispy deep fried patties with boiled shredded chicken with one or two mixed vegetables, herbs,spices and fresh breadcrumbs as binder.They serve as a great snack or appetizer with tea or at parties and is an all time favorite in almost every Indian household. Traditionally all ingredients are cooked alongwith boiled and shredded chicken and mixed together before shaping into cutlets and deep fried.
Serve these crispy chicken cutlets with hot and sweet tomato sauce, onion rings ,lemon wedges with a cup of tea.They can also be used to make burgers, wraps or sandwiches.

Ingredients

5 servings
  • For filling :
  • 250 gmsboneless chicken breast
  • 3fresh bread crumbs
  • 2onions chopped finely
  • 1 tspginger paste
  • 1 tspgarlic paste
  • 1 tbspfinely chopped capsicum
  • 1carrot finely chopped
  • To taste salt
  • 1 tspkasoori methi
  • 1 tbspcoriander chopped
  • 1 tspred chilli powder
  • 4-5green chillies chopped finely
  • 1 tspmeat masala
  • 1/2 tspblack pepper powder
  • 1/2 tspgaram masala
  • For coating :
  • 1 bowldry breadcrumbs
  • 2 tbspcornflour
  • 2 tbspgramflour or 1 egg
  • As neededoil for frying

Steps

  1. 1

    Heat half cup water with 1/4 th tsp salt and pressure cook chicken cubes upto 2 whistles. Open pressure and dry up leftover moisture in chicken.Shred or pulse chicken in a food processor. Heat 2 tbsp oil in a pan.Fry chopped onion till transparent. Add carrots and capsicum and fry in low flame till soft.Add green chillies and toss.Then add shredded chicken,ginger garlic paste and dry masalas,salt to taste,fresh breadcrumbs, chopped coriander,kasoori methi and toss.

    Add garam masala and fry till the chicken and breadcrumbs mix well. Mash to form a smooth dough.Divide this dough into round or oval cutlets or patties.

    Make a slurry of cornflour, gramflour or one egg.Coat each cutlet with dry flour and dip in the slurry. Then double coat in breadcrumbs to make the cutlets crispy.Refrigerate for an hour before frying the cutlets.

    Heat oil in a pan and deep fry cutlets. Serve as an evening snack or appetizer with onion and lemon slices and hot and sweet tomato sauce alongwith tea.They can also be used to make burgers, wraps or sandwiches.
