A had some root veg lying in my cupboard. And its my vegan day today. So I made up this recipe. Just some cleaning and cutting veg. Easy peasy.
This also makes a great side dish for gammon. If you add more bouillon and mix it is a great filling winter soup´

Ingredients

  1. 1kilo of root veg. I use celeriac,potato,sweet potato, carrot,
  2. Daikon,koolrabi,parsnip
  3. 750 mlveg bouillon
  4. 2 tb(cocoa) oil
  5. 1/2diced large onion
  6. 1 tbgarlic paste,ginger paste
  7. 3 tbonion powder
  8. 1/2peperoni (optional)
  9. 2 tb(devils)mustard
  10. 1 dashvinegar
  11. 1bouquet garni (bay, thym,star anise,clove)

Cooking Instructions

    Clean the veg

    Cut in to large chunks

  3. 3

    Heat the oil and sweat the onion, garlic and ginger

  4. 4

    Put in the veg. I put in 2/3 (1kg) and left 1/3 to make a curry. See other recipy

    Put in bouillon, onion powder, bouquet,peperoni,

  6. 6

    Simmer for 25 min or until the veg are tender but still have some bite.

    Put in the mustard and the vinegar

  8. 8

    Pick out the bouquet and the peperoni

  9. 9

    Leaf for a day or eat immediatly

  10. 10

    Put some green herbs on before serving
