Ingredients

1 - 2 people
  1. 1(2-3 lb) Butternut Squash (Peeled & Diced into 1 in. Cubes)
  2. 1 TbspOlive Oil
  3. 2 TbspMelted Butter
  4. 3 ClovesGarlic (Minced)
  5. 1 tspSalt (Or To Taste)
  6. 1 tspGround Black Pepper (Or To Taste)
  7. 1-2 TbspFresh Rosemary and/or Thyme (Or 2 tsp Dried)

Cooking Instructions

    Preheat Oven to 400° F

    Wash Butternut Squash and pierce skin with Fork several times on all sides. To make the Squash easier to cut, Microwave for 2 to 3 minutes. Once cooled enough to the touch, peel skin with a Peeler. Slice off both ends, and now cut down the middle lengthwise. Scoop out seeds with a spoon, and save them for later roasting, if desired. Dice Squash into 1" Cubes.

    Pour Squash on a baking sheet or into a casserole dish. Pour over the rest of the ingredients and mix well. Make sure Squash is in a single, even layer and then put into the oven. Roast for 40 - 50 minutes, or until soft and as caramelized as desired. I like to stir the Squash about half way through cooking.

    This recipe can easily be made using different spices, including sweet ones. For a sweeter version, just use about a quarter of the salt and add a few Tbsp of Brown Sugar or a Tbsp or two of Honey or Maple Syrup. Other popular additions are Cinnamon and Nutmeg. Another great dinner option is to add in @ 2 lbs. Skin On, Bone In Chicken (I prefer Dark Meat) Just sprinkle with the same seasonings and nestle it in a Casserole Dish with the Squash. Delicious!
