My Genovese Focaccia with Purple Potatoes

Today I made a focaccia that's crispy on the outside and soft on the inside, thanks to the potatoes in the dough. I used spelt flour and purple potatoes, keeping the skins on. The dough rises for four and a half hours. Before the final rise, brush it with a mixture of water, extra virgin olive oil, and coarse salt. Finish with rosemary and thinly sliced potatoes on top.

Ingredients

5 hours
  • 3 1/4 cupsspelt flour (about 400 grams)
  • 1 lb (2 oz)purple potatoes (about 500 grams)
  • 1/3 cupwater (100 ml)
  • Halfa cube fresh yeast
  • 4 tablespoonsextra virgin olive oil
  • 2 teaspoonssalt
  • For the emulsion
  • 4 tablespoonsextra virgin olive oil
  • 2 1/2 tablespoonswater (40 ml)
  • 1 teaspooncoarse salt
  • For topping
  • 7 ozpurple potatoes (about 200 grams)
  • Rosemary

    Boil the potatoes, then mash them and add to the flour. Place everything in a glass bowl and mix.

    Warm the water and dissolve the yeast and honey in it. Gradually add to the mixture and stir. Add 4 tablespoons of olive oil and 2 teaspoons of salt. Knead for another 5 minutes. Don't worry if the dough is sticky. Turn the dough out onto a floured surface and knead, folding it over itself three times and shaping it into a ball. Grease a large bowl, place the dough inside, cover with plastic wrap, and let rise for 4 hours.

    After 4 hours, grease a baking pan lined with parchment paper. Gently transfer the dough to the pan. Stretch it out and use your fingertips to press it toward the edges. Let it rise for another hour.

    Keep your fingers angled and poke lots of holes in the focaccia. Prepare an emulsion with olive oil, water, and salt, and pour it over the surface, letting it fill the holes. Wait another 30 minutes, then top with thinly sliced potatoes and rosemary. Bake at 400°F (200°C) for 20–25 minutes.

    Let cool slightly before serving.
