Chicken parmesan with a pasta side dish

Sit chicken out for 30 mins to come to room temperature

Set up your dredge while waiting.

I use a plate for the flour and bread crumbs. Put flour on one plate and bread crumbs on another. In a large bowl mix 2 eggs and 2 tbsp of milk.

Season flour and egg mix. I use season salt and Emerils original essence. Use whatever you like.

Cut chicken breasts in half and place in between cling wrap and pound it until its thin.

Season chicken well and coat each piece with flour. Dip it in egg mix and into bread crumbs. Coat very well.

This is a very good seasoned bread crumb to use. It has pecorino and romano cheese in it.

Heat up oil on medium heat while dredging chicken.

When the oil is at 350° start frying and fry for 5 mins or until internal temperature is 165°.

About halfway through frying chicken start boiling spaghetti noodles and cook according to package directions.

When noodles are done add spaghetti sauce and mix well.

Place cooked chicken on a baking sheet and put spaghetti sauce with fresh chopped basil on top. Slather it with parmesan and mozzarella cheese.

Put oven broiler on high and bake for around 5 mins or until cheese is melted and bubbly.

NOTE**** make it your own. I added sauteed onions and mushrooms to my noodles. Also use any type of cheese. I also added asiago as well.
