Add Coconut Milk and Sugar into a saucepan and bring to a simmer (slow or soft boil), stir once and gently simmer for 30 minutes over mediumheat. The mixture will thicken and volume will reduce by about half.

Remove from heat and let cool completely. The mixture will thicken up a bit.

Whisk Coconut Cream, I used a stand mixer but it can be done with a normal whisk.

Whisk the condensed Coconut Milk and Vanilla Essence to the Coconut Cream until well combined.

Transfer to a container with a lid and freeze for 4 hours or overnight.
