Ingredients

  1. 1 lbbreakfast sausage
  2. 2 tbsbutter
  3. 1red pepper, diced
  4. 1yellow pepper, diced
  5. 1/2yellow onion diced
  6. 1broccoli crown, diced
  7. 8 ozmushrooms, diced
  8. 8large eggs
  9. Fresh parsley, to taste
  10. Salt, to taste
  11. Pepper, to taste
  12. 1 3/4 CupsMilk
  13. 1/2Flour
  14. 3 CupsMozzarella cheese, shredded
  15. 3 CupsCheddar cheese, shredded

Cooking Instructions

    Preheat oven to 350, spray 9x13 glass baking pan with non-stick spray.

    Mix together cheeses and layer 3 cups into greased pan.

    Cook sausage in frying pan. Whike sausage is cooking, cut all of the vegetables.

    Layer cooked sausage ontop of cheese in baking pan.

    Melt the butter in a frying pan, add vegetables and cook until tender.

    While vegetables cook, combine eggs, milk, flour, salt, pepper, and parsley in a large bowl. Use an immersion blender to mix and aerate the eggs.

    When vegetables are done, layer them onto of the sausage. Add remaining 3 cups of cheese, spread evenly.

    Pour egg mixture over the cheese. Let the egg settle over top the other ingredients. Place in the oven and cook for 35-40 minutes.

    Top will be slightly brown.

    Cut into 8 large pieces and serve.
