Ingredients

  1. 6boneless skinless chicken breasts or thighs
  2. 1/2yellow onion (diced)
  3. 1/2green bell pepper (diced)
  4. 1/2red bell pepper (diced)
  5. 1/2yellow bell pepper (diced)
  6. 1/2orange bell pepper (diced)
  7. 1 cupsour cream
  8. 1 tbspolive oil
  9. 1 tbspgarlic powder
  10. 1 tspblack pepper
  11. 1 packetfajita seasoning
  12. 4 ozcream cheese
  13. 2 cupsshredded cheddar cheese

    Preheat oven to 350

    Cube up chicken into bite size pieces. Lightly coat bottom of skillet with olive oil & cook chicken til fully cooked. Seasoning with black pepper & garlic powder.

    Remove chicken from skillet leaving all the chicken juice in the skillet. Add diced peppers & onion. Cook until tender.

    Add chicken back to the skillet with cooked peppers. Add fajita seasoning. Mix thoroughly.

    Add cream cheese & sour cream. Mix until all is blended with chicken & peppers.

    Then spoon into a 9x13 baking dish & top with shredded cheddar. Place in oven for 20 minutes or until cheese is bubbly. Serve & enjoy!
