Ingredients

1.5 hours
5 to 6 person
  • 1.5 cupsmaida
  • 100 mlRum (for soaking)
  • 1 tbspcocoa powder
  • 3 tbspmilk powder
  • 2 tbspcornflour
  • 1 tspbaking powder
  • 1/2 tsp baking soda
  • 1/2 +1/4th cup warm milk
  • 1.5 tspvinegar
  • 3/4 cup powdered brown sugar
  • 1/2 + 1/4 cup cupter
  • 1 tspvanilla essence
  • 1 tsporange zest
  • Soaked dry-fruits along with nuts
  • 1 tbspblackcurrant
  • 1 tbspblueberry
  • 1 tbspcranberry
  • 2 tbsptooti-frooti
  • 2 tbspchopped dates
  • 2 tbspchopped dried figs (anjeer)
  • 2 tbspchopped dried mango
  • 2 tbspchopped dried kiwi
  • 2 tbspchopped dried peach
  • 2 tbspchopped dried plum
  • 2 tbspchopped dried cherries
  • 2 tbspchopped dried pineapple
  • 2 tbspchopped dried papaya
  • 2 tbspchopped almonds
  • 2 tbspchopped cashews
  • 2 tbspchopped brown rasins
  • 2 tbspchopped black rasins
  • Spice powder to be added
  • 1/4 tsp clove powder
  • 1/4 tsp cardamom powder
  • 1/4 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1/2 tsp dried ginger powder
  • as required Some chopped nuts +1 tsp maida for garnishing

Steps

    Firstly add all the dried-fruits and chopped nuts, mentioned above in a bowl. Now add 100 ml of rum to it. Give it a mix, now store it in an air-tight container. Let it soak in rum for 3 to 4 days. Give it a mix once in 24 hours.

    Now pour milk in a small bowl & add vinegar to it. Mix it and keep it aside for 10 mins. Your buttermilk is now ready.

    Now take a large mixing bowl and add butter, brown sugar powder, vanilla essence and half buttermilk mixture into it. Now mix everything till its well combined.

    Now keep the strainer over it & add maida, cocoa powder, baking powder, baking soda, milk powder, cornflour, cinnamon powder, cardomom powder, ginger powder, nutmeg powder, clove powder and cardomom powder. Now strain everything. Then give everything a good mix.

    Now strain the soaked dried-fruits and nuts then add them in the cake batter. (nearly 1 and half cups of soaked dried-fruits and nuts) Now combine everything well.

    Then add the remaining buttermilk and combine everything well. Mix by cut and fold method. The batter should be slightly thick than the normal cake batter.

    Now grease a cake-tin with oil, apply butter paper over it, now pour the cake batter into it. Dab it twice so that the air bubbles gets off. Now for garnishing, in a small bowl add, add some chopped nuts and add 1 tsp maida to it. Mix it so that the nuts gets well coated with the flour. Now sprinkle these nuts over the cake. This will prevent the nuts from sinking into the cake.

    Now for pre-heating, take a kadai for pre-heating with it's base covered with salt and a stand over it. Cover it and pre-heat the kadai for 5 mins on high flame and then 3 mins. on medium flame.

    After 8 mins of pre-heating, place the cake-tin over the stand & immediately cover the kadai & bake it on a low flame for about 1 hour approximately. After 1 hour of baking, check it by inserting a toothpick, if it comes out clean then your cake is done.

    Now remove it from the gas, let it come to room temperature then de-mould it. Enjoy this Christmas with your family and friends by making this unique, traditional and authentic plum cake, using Rum.
