Seared Garlic Butter Lobster

Clean and halve the lobsters. Blanch in hot water for 5mins for easy cleaning or removing any smell. This Blanching step is however, optional. Next, Season lobster with salt and pepper.

Melt 2 tbsp of butter and oil in a skillet over medium high. Sear lobsters flesh side down for a minute or two.

Next, flip them, shell side down. Cook for another minute or two. Push to the side, melt remaining butter, sauté garlic until it reaches faint tinge of brown (very light brown). Turn heat to low. Add a tsp or two of lemon juice. Stir and mix. Spoon garlic sauce over the lobster meat. Cook for another minute or two or until it's fully cooked. Remove from the heat.
Reminder: Avoid over cooking the meat (lobster meat).

Transfer to a plate. Serve warm with left over hot garlic sauce from the skillet. Garnish as preferred. Serve with lemon slice.
