I had some beef trimmings left after portioning beef, so I used them to make a hot pot broth with a clear soup base.

Place the beef trimmings in a pot with cold water. Bring to a boil, then remove the beef and rinse it clean. Wash all the beef broth ingredients and place them in an electric pressure cooker. Add water up to the maximum fill line. Select the beef setting (about 35 minutes on high pressure).

Strain the broth to use as the hot pot soup base. Remove the mushrooms, corn, carrot, and beef if you like their texture, and season the broth with a little salt.

Add your favorite hot pot ingredients and vegetables, and enjoy.
