I made this for my lunch on a really cold day. I looked to see what ingredients I had. I only had Chinese cabbage! So I made a very simple risotto.

Ingredients

1 serving
  1. 1bowlful 16 grain rice
  2. 100 mlSoy milk
  3. 4leaves Chinese cabbage
  4. 1/4Onions (finely chopped)
  5. 1 dashOlive oil (for stir frying)
  6. 1 tspDashi stock granules
  7. 1/4 tspSalt
  8. 1/4 tspBlack pepper
  9. 1Dried Basil

Steps

  1. 1

    Cut the Chinese cabbage into bite-sized pieces and mince the onion. Heat some olive oil in a frying pan and stir-fry.

    When the cabbage has become tender and transparent, add the rice and the soy milk, in that order. Lower the heat to low and simmer until the liquid has evaporated.

    Once the liquid has evaporated and the rice grains have expanded, season with salt, pepper, and dashi stock.

    Plate and top with basil if you'd like.
