Yakitori is a Japanese version of chicken BBQ and is a street food in a Japan, typically cooked over small charcoal grill, to give a slightly smoky flavour basted with a sweet and salty sauce. Not many people have a small indoor bbq, so the below recipe uses oven grill. I am practicing and will evolve the sauce overtime, which I want to use with Pork an Shiso.

Ingredients

Prep 1hr+ cooking: 20min
4 servings
  • For  the Skewers
  • 4chicken thighs
  • 6spring onions, cut into 2.5cm lengths
  • For the sauce ‘Tare’
  • 250 mlchicken stock
  • 2spring onions
  • 1 knobginger, about 2.5cm in size, sliced
  • 25 mlsake
  • 50 mlmirin
  • 1/2 tbspsugar
  • 25 mltamari
  • 25 mldark soy sauce
  • 25 mlwater

Steps

Prep 1hr+ cooking: 20min
  1. 1

    For the sauce
    Add all the source ingredients into a saucepan, bring to the boil and reduce by half until thick and glossy.

    * Prepare this the day before, or a few hours before to let it cool in the Fridge. You can place in a Jar and store in the fridge for a few weeks.

  2. 2

    For the Skewers
    Remove any skin from the chicken and cut into rectangular strips. Fold each strip, pushing a skewer through each side to create a domed effect. Alternate each piece of chicken with a section of spring onion and brush lightly with oil

  3. 3

    Lightly baste both sides of the chicken and place under a hot oven grill for 3-4 minutes.

  4. 4

    Flip skewers and brush the surface with source. Cook for 3 minutes.

  5. 5

    Flip over, brush the surface with source and cook for 30 seconds.

  6. 6

    If required, turn the skewers once more to char the other side.

  7. 7

    Remove the skewers from the tray and place them onto a plate. Serve immediately.
