I have prepared this delicious recipe of Payasam keeping the tri color theme in mind. For the green part, I have added sweet pistachio paste to the prepared Payasam , and for the Orange part, I have added cooked grated carrots infused with saffron. The white part is flavoured with cardamom powder. Try it, it tastes delicious!

First, drain water from the rice. Then heat ghee in a pan. Add the rice and saute for 5 to 8 minutes.

Then add milk, water and slow cook the rice till soft. Add sugar, cardamom powder and mix.

Cook further till done and cool the Payasam.

Now grind the pistachio with green food colour and 1 tablespoon sugar to a fine paste.

Similarly, cook the grated carrots in microwave for 1 minute. Then add sugar, Saffron, orange food colour and mix well.

Then grind it to a smooth paste. Divide the white part into 3 sections. Add carrot paste to one part and pistachio paste to another. Combine both well

Keep the third part white. Now arrange the tricolour Payasam in a plate and arrange blue colour sugar vermicelli in centre. Serve chilled.
