Ingredients

  1. 1 tbspolive oil
  2. 1yellow onion
  3. 1parsnip
  4. 1carrot
  5. 1large Japanese sweet potatoes
  6. 1large yam
  7. 3 stalkscelery
  8. 3large zucchini
  9. 1 jardiced tomatoes
  10. 4 cupsvegetable broth
  11. 1 cupgluten free elbow pasta
  12. 1/4 cupred lentils
  13. 1/4 cup1:1 gluten free flour, mixed in
  14. 2 tspsea salt
  15. 1 tsprosemary
  16. 3-1/2 tspItalian seasoning

Cooking Instructions

    Dice all vegetables.

    Set instant pot on saute. Add olive oil and onions and saute for 5 minutes.

    Add all remaining ingredients. Stir and set on stew.

  4. 4

    Once instant pot chimes, quick release or let sit for 10 minutes, then stir and serve.
