Masoor dal is very easy to make and is prepared with red lentils. There are two popular types: black and red. This recipe uses red lentils.

Soak the lentils in water for 20 minutes.

Add the soaked lentils to a pressure cooker with 1 cup (about 240 ml) of water, or as needed. Add salt to taste and 1 teaspoon turmeric. Close the lid and cook on medium heat for 3 whistles.

Heat a skillet over the stove. Once hot, add the oil. When the oil is hot, add cumin seeds and mustard seeds. After they start to splutter, add the chopped tomatoes and green chilies. Cook until the tomatoes are soft. Add turmeric, red chili powder, and coriander powder. Mix well. Add the cooked lentils and boil for 5 minutes. Turn off the heat. Garnish with chopped cilantro and serve with roti or rice.
