Spinach is especially good in the winter, so I made palak paneer for lunch. Palak paneer tastes delicious when served with roti.

First, clean the spinach and blanch it briefly in hot water. Immediately rinse it in cold water using a strainer.

In a separate pot, add a little sugar to hot water and boil the paneer for 2 minutes. Drain and cut the paneer into pieces.

Blend the spinach, onions, green chili, tomatoes, and garlic together to make a paste.

Heat oil in a skillet. Add asafoetida, mustard seeds, and bay leaves, and let them sizzle.

Add the chopped onions and sauté lightly. Then add the spinach paste and a little water, and cook.

Once cooked, add all the spices and mix well. After the spices are cooked, add the paneer pieces and mix.

Your palak paneer is ready. Turn off the heat. Serve the palak paneer on a plate and top with grated paneer.
