This vegetarian braised 'mackerel' with vegetables has a fish-like aroma and appearance, similar to traditional braised fish.

Slice the vegetarian ham thinly like fish fillets. Use a mold or knife to cut into oval shapes to resemble mackerel slices. Cut the nori into thin strips and wrap around the edges to mimic fish skin. Lightly brush the 'fish' with soy sauce to marinate, then pan-fry briefly. Wash and cut the vegetables into small pieces.

Heat a pan with oil and sauté the finely chopped green onion (white part) until fragrant. Add the harder vegetables first, then gradually add the remaining vegetables and mushrooms.

Cover and cook until the vegetables soften. Add the 'fish' slices once the vegetables have released their juices. Cover again and continue cooking until the vegetables are tender. Season to taste with soy sauce and vegetarian seasoning.

Once everything is tender and flavorful, transfer to a plate and serve hot with rice.
