Ingredients

  • 1roma tomato, quartered
  • 8 gcherry/grape tomatoes, halved
  • Cooking oil
  • 1carrot, diced
  • 1/2onion, diced
  • 1 cupveg stock
  • 1 cupcoconut milk
  • 1/3 cupdiced canned tomatoes
  • 4 clovesgarlic
  • Salt to taste
  • Pepper to taste
  • Garlic powder to taste
  • Dried onion to taste
  • Paprika to taste
  • Brown sugar to taste
  • Dried basil to taste

Steps

1 hour
  1. 1

    Roast roma and cherry/grape tomatoes in the oven for 15 min

  2. 2

    Combine roasted tomatoes and all over ingredients into insta pot

  3. 3

    Pressure HIGH. Time 9 minutes

  4. 4

    Leave warming on. Depressurize

  5. 5

    Mix thoroughly

  6. 6

    Serve
