Ingredients

  1. 1roma tomato, quartered
  2. 8 gcherry/grape tomatoes, halved
  3. Cooking oil
  4. 1carrot, diced
  5. 1/2onion, diced
  6. 1 cupveg stock
  7. 1 cupcoconut milk
  8. 1/3 cupdiced canned tomatoes
  9. 4 clovesgarlic
  10. Salt to taste
  11. Pepper to taste
  12. Garlic powder to taste
  13. Dried onion to taste
  14. Paprika to taste
  15. Brown sugar to taste
  16. Dried basil to taste

Steps

1 hour
  1. 1

    Roast roma and cherry/grape tomatoes in the oven for 15 min

  2. 2

    Combine roasted tomatoes and all over ingredients into insta pot

  3. 3

    Pressure HIGH. Time 9 minutes

  4. 4

    Leave warming on. Depressurize

  5. 5

    Mix thoroughly

  6. 6

    Serve
