Basanti Pulao is a traditional Bengali dish prepared during festivals. This bright yellow coloured rice is flavoured with whole spices and some dry fruits.

Steps

In a bowl take soaked rice, 2 tbsp ghee, turmeric powder, ginger paste, sugar and salt. Mix well. Keep aside for 10 minutes.

Heat ghee in a pan. Add raisins and cashew nuts. Fry them till golden in colour. Take it out from the pan.

In the same pan add green cardamom, cinnamon, cloves and bay leaves. Saute for few second.

Now add rice mixture. Stir gently. Cook for 2 minutes.

Pour water and bring it to boil over high flame.

Cover it with a lid. Cook on medium flame about 10- 15 minutes. Until the water has evaprated and the rice is fully cooked.

Switch off the flame. Add fried cashew nuts and raisins. Mix gently. Serve with mixed fruit raita.
