Steps

Parboil rice. Drain and rinse. Set aside

Add vegetable oil in a pot, add sliced onion and sautee. Add tomato paste. Season to taste. Allow to fry.

Add parboiled rice. Add enough water or stock to cook the rice. Stir thoroughly. Add the fried fish. Cover, lower flame and allow to cook till water is absorbed.

Plate your rice and fish. Garnish with sliced cucumber and tomatoes and a wedge of lemon.
