My fiancé is from Beijing, which is famous for its dumplings. In Japan, fried dumplings are the most popular, but Beijing-style dumplings are boiled.

When I visited my fiancé's family in Beijing 2-3 years ago, they taught me how to make Beijing-style dumplings, but they didn't measure the seasonings. So I found a recipe on Cookpad Japan that looked similar and adjusted it to match how my fiancé's family makes them.

It takes some time to make, but I freeze some so I can enjoy them when I'm busy.

Ingredients

1 hour 30 minutes
Serves 3-4 servings
  • 2 clovesgarlic
  • 1equal amount of ginger (about 2 cloves worth)
  • 2dried shiitake mushrooms
  • 1egg
  • 2 2/3 tablespoonswater (40 ml)
  • 2 tablespoonssake (Japanese cooking wine)
  • 2 tablespoonssoy sauce
  • 1/2 teaspoonsugar
  • 1 teaspoonsalt
  • 1 teaspoonpepper
  • 1 teaspoonfive spice powder
  • 2 bunchesgarlic chives
  • 1white scallion
  • 14 ozminced pork (about 400 grams)
  • 5 1/3 ozshrimp (about 150 grams)
  • 1 tablespoonpotato starch
  • 2 teaspoonssesame oil
  • 30-40dumpling wrappers

Steps

    Mince the garlic, ginger, and dried shiitake mushrooms.

    Beat the egg and add the minced garlic, ginger, shiitake mushrooms, water, sake, soy sauce, sugar, salt, pepper, and five spice powder.

    Cut the garlic chives into 1/2-inch pieces (about 1 cm) and finely mince the white scallion. Set aside.

    Roughly chop the shrimp. Don't cut them too small so you can enjoy the texture.

    Add the minced pork to the egg mixture and mix with clean hands until fully combined and sticky.

    Add the chopped shrimp and potato starch, and mix well.

    Add the vegetables and mix. Add the sesame oil last and mix again.

    Assemble the dumplings.

    Bring a pot of water to a boil and add the dumplings. When the water returns to a boil after adding the dumplings, add another cup of water. Repeat this step three times. Make sure the dumplings are cooked through, then they're done!

    For dipping sauce, you can use soy sauce, but people in Beijing love a vinegar called Chinkiang vinegar. I also really like using sweet chili sauce.
