Chocolate Chip Cookies

In a large bowl, mix the sugars (brown and white), butter, and salt until you have a thick, smooth mixture.

Add the eggs and vanilla to the mixture and stir until it forms a long ribbon when you lift the whisk.

Sift the flour and baking soda into the mixture, then use a spatula to fold it in gently (scoop from the sides of the bowl and fold over, being careful not to overmix). If the dough is too runny, gradually add more flour until it can be shaped into balls.

Mix in the chocolate and let the dough rest for at least 30 minutes (I let it rest for 2 hours; the longer it rests, the better the cookies, but don't leave it for days).

Preheat the oven to 350°F (180°C). Shape the dough into round balls and bake for 12-15 minutes. If the first batch doesn't spread as desired, flatten the dough balls slightly for the next batch to improve their appearance.

Once baked, place the cookies on a rack to cool and enjoy with milk. (Tip: If the cookies harden before you can eat them, place a slice of bread in the container to soften them again.)
