I was lucky enough to buy super fresh seasonal hake roe. It turned out to be a super quick lunch.

Get fresh hake roe when in season

Put them in 80 degree ish boiled water for 30 sec. Then wash with cold water quickly and gently.

Cut the thin skin and take the roe inside out. I tried to separate skins but too much bother, just did the best effort.

Boil spaghetti.
- 5
Lightly fry in olive oil. Put wine and soy sauce. Don’t hear too much. Taste it and adjust soy sauce.

Mix the roe and the spaghetti.
