Spinach Fritters or Palak Pakoda are crisp deep fried evening snack made with Spinach leaves, gramflour,cornflour and few spices.Here Spinach leaves are dipped in a spiced gramflour batter and deep fried to get a crispy coating with the distinct taste of Spinach inside.Another process is to finely chop Spinach, mix them with herbs, spices and gramflour and deep fry.Both methods are quick and easy to make.Serve them as an evening snack with green chutney and a cup of tea.

Remove the hard stems and pluck the spinach leaves alongwith a portion of the soft stem.Wash and pat dry.

Sift gramflour with cornflour and baking powder.Add salt to taste,green chillies and kalonji.Add 1 tbsp hot oil and mix well.Gradually add water to make a semi thick batter of pouring consistency.Beat well to make the batter smooth and light.

Heat oil in a pan until medium hot.Dip the spinach leaves,2 at a time in the batter and coat it evenly. Fry in medium to high heat flipping when one side done and the fritters turn golden brown and crispy.Serve hot immediately as an evening snack with tea,or as a side dish with dal and rice.
