Holi is incomplete without Thandai. Today I have made a thandai masala paste along with Thandai. This massla paste gives awesome taste to thandai. It is prepared with combination of nuts, spices, saffron, rose water. Use this thandai masala for flavouring various other dessert like kheer, phirni, ice cream, kulfi, rabdi and so much more.

Holi is incomplete without Thandai. Today I have made a thandai masala paste along with Thandai. This massla paste gives awesome taste to thandai. It is prepared with combination of nuts, spices, saffron, rose water. Use this thandai masala for flavouring various other dessert like kheer, phirni, ice cream, kulfi, rabdi and so much more.

First soaked the cashew nuts, almond, cardamom, pepper, poppy seeds, melon seeds, fennel seeds, pistachio in water at least for 30 minutes.

Now take all soaked Ingredients in a blender jar and add nutmeg powder, cinnamon powder, soaked saffron milk, rose water and blend it with little milk if required, till it is a fine puree. Thandai masala puree is ready. Keep aside.

Pour milk in a pan and bring it to a boil and let it simmer and boil. Now add sugar and 2-3 tbsp prepared thandai masala puree and mix it well and boil again on simmer for another 5 minutes. Remove and cool it completely.

In a glass add ice cubes and pour the thandai over it, garnish with crushed pistachio and serve chilled and enjoy Holi Festival.
