Start cooking the orzo. Cook as per packet instructions.

Put your salad leaves in a bowl. This can be a bowl per person, or one big bowl for sharing.

Chop the feta, beetroot, and mackerel. Add to bowl with your salad leaves.

Once the orzo has cooked, drain it. Then add to each bowl. Mix together.

Dress with oil and season with black pepper.
