Here’s a foolproof recipe for fries that everyone at the table will love—delicious and guilt-free!

Cut the celery root into even slices about 1/3 inch (8–10 mm) thick without peeling it first. Then trim off the outer skin from the slices (it’s much easier this way).

Quickly rinse the peeled slices under running water. Then cut them into evenly sized fries.

Place the fries in a large bowl and drizzle generously with olive oil. Add Herbes de Provence to taste. Toss well with a spatula to coat the fries evenly.

Spread the fries out on one or two baking sheets lined with parchment paper. Arrange them so they don’t overlap. Sprinkle with flaky sea salt.

Bake for 30–35 minutes in a preheated oven at 400°F (200°C). Watch them closely—they should turn golden and slightly caramelized, but not burn.

Serve right away. These are excellent with chicken meatballs and cranberry sauce, or with red onion confit.
