  3. 1ramekin

    Using fresh eggs is key to a good poached egg.

    Crack and sieve the egg into the ramekin. This will reduce the amount of white wisps from forming later when cooking the eggs.

    Bring a deep pot of water to a boil then reduce the heat to a simmer; there should be no bubbles breaking the surface. Add a splash of vinegar, and start stirring the water to create a vortex.

    Gently but quickly drop the egg in the centre, and let it cook for 3 minutes. Once cooked, take it out using a slotted spoon and dab it dry on a paper towel.
