A colorful dish and a different idea for enjoying broccoli. Very tasty and visually appealing, it satisfies the eyes first and then the stomach. I got the idea from a video on Facebook, and it was very successful. I always boil broccoli using the method from @I❤️to Cook by Rania, and it cooks perfectly without becoming mushy. Cooking Instructions

Separate the broccoli into florets and boil in salted water without overcooking.

Grease a medium baking dish with olive oil. Use a slotted spoon to remove the broccoli from the water, drain, and place in the baking dish in a single layer. Slice the bell pepper into strips and place on top. Cut the tomato into small pieces, remove the juices and seeds, and add on top of the broccoli.

In a bowl, beat the eggs, add the yogurt, and mix. Add salt, pepper, and the grated Gruyère. Beat to combine and pour over the broccoli.

Sprinkle the kasseri or yellow cheese on top. I had a little, but if you have more, feel free to add more than what is shown in the picture.

Bake at 400°F for 25-30 minutes. Test with a knife to see if the egg has set in the center.

I serve it to my loved ones all the time, and even those who would usually frown at the sight of broccoli, can’t get enough of it !Notes:* I measured the spaghetti portion for this recipe by creating a big circle with the tip of my thumb and index finger.** To prevent the sauce from drying out, I recommend adding up to 1/3 cup of water or pasta water to the pot.
