A colorful dish and a different idea for enjoying broccoli. Very tasty and visually appealing, it satisfies the eyes first and then the stomach. Ingredients

  1. 1small broccoli
  2. 1small red bell pepper
  3. 1small tomato
  4. 6eggs
  5. 1/2 cupGreek yogurt (about 3 1/2 ounces)
  6. 1 handfulgrated Gruyère cheese
  7. Salt and pepper
  8. 1little grated kasseri or yellow cheese, coarsely grated
  9. 1little olive oil for greasing the baking dish

Cooking Instructions

    Separate the broccoli into florets and boil in salted water without overcooking.

    Grease a medium baking dish with olive oil. Use a slotted spoon to remove the broccoli from the water, drain, and place in the baking dish in a single layer. Slice the bell pepper into strips and place on top. Cut the tomato into small pieces, remove the juices and seeds, and add on top of the broccoli.

    In a bowl, beat the eggs, add the yogurt, and mix. Add salt, pepper, and the grated Gruyère. Beat to combine and pour over the broccoli.

    Sprinkle the kasseri or yellow cheese on top. I had a little, but if you have more, feel free to add more than what is shown in the picture.

    Bake at 400°F for 25-30 minutes. Test with a knife to see if the egg has set in the center.
