This sweet is slightly different from traditional ones. Here pineapple enhances the taste of coconut burfi. I hope it will be well appreciated. #SC3-

Grate khoya finely. Take a thick bottom kadhai. Add grated khoya, ghee and sugar. Mix well.

Switch on the burner and cook with medium flame under constant stirring. Once khoya and sugar melts, add coconut paste into it.

Cook under constant stirring till the mixture detaches the kadhai. It will take more than 10mins.

Switch off the burner. Add rice flour and mix quickly so that no lump is formed.

Pour 3/4th of the mixture into a greased tray. Spread evenly with moist palm.

In the remaining 1/4th mixture, add pineapple jam and food colour. Mix quickly and spread it on the top.

Sprinkle roasted suji and pista slices on the top and press gently to attach them with the mixture.

Cut into burfi shapes while remaining hot. Allow it to cool down. Remove the burfi from the tray and decorate.
