Ingredients

6-8 servings
  1. 1-9" pie crust, store-bought (find in the refrigerated section)
  2. 1-1/4 cupsdiced, cooked ham (or bacon, cooked and crumbled)
  3. 1-1/4 cupsfresh asparagus spears, cut into 1/2" lengths (or 2 cups fresh spinach, coarsely chopped)
  4. 1-1/2 cupsSwiss cheese, shredded (or cheddar, or a mix of cheeses)
  5. 2 Tbspshallot, chopped (or red onion)
  6. 6large eggs
  7. 1-1/2 cupsheavy cream (half & half works fine)
  8. 3/4 tspdried dill (or thyme or basil)
  9. 1 tspsalt
  10. 1/4 tsppepper
  11. TIP: if using leeks or mushrooms, sauté them first in a little butter. After they're cooked, season with a sprinkle of salt (and garlic powder if you like.) I like garlic!

Cooking Instructions

    Preheat oven to 375 degrees F.

    Fit the pie crust into a 9" pie pan. Put a cookie sheet under in case of spills.

    Mix together the eggs, cream, dill, salt and pepper in a blender.

  4. 4

    Layer the ham, asparagus, shallot, and cheese into the pie crust.

  5. 5

    Pour egg mixture over top.

  6. 6

    Bake at 375 degrees F for about 40-45 minutes until set.

    Serve with a fresh, green salad.
